On Cooking,

People often ask me,
“So, what kind of food do you cook?”

My answer is always the same.
“I cook.”

At etcha, food doesn't need labels. Food is about connection, warmth, and belonging. It’s the food that speaks, especially when words fall short.

My love for cooking comes from my grandmother. She passed it down to me like an heirloom. From her, I learned to cook with care, to respect the seasons, and to value the people behind every ingredient. She taught me that food doesn’t begin in the kitchen, but out in the fields, with the farmers, the makers, and the land itself. Because of that, I take seriously the bond between chefs and farmers—a collaboration rooted in trust and respect, guided by the land and the seasons that shape our work. We let nature set the pace.

My grandmother always swam against the current. I suppose I do too. Having opened in 2025, with no legacy to imitate and no expectations to uphold, we’ve been given a rare kind of freedom. A space to create daringly, experiment thoughtfully, build something intentionally from the ground up, guided by honest curiosity rather than convention.
